The Atlantis Steakhouse welcomes Caymus Vineyards, a family-owned winery best known for their Cabernet Sauvignons. Their two Cabernets – a “Napa Valley” and the venerable “Special Selection” – achieve their aromas and flavors through leaving the fruit to hang on the vine longer to develop suppleness, increase color, and matures the tannins of the grapes.
